Recipe by Nour The Tripoli Vegan @ohmyhovencooks

Ingredients for the dough:

  • 3 cups of flour

  • 1 cup of water

  • 1/4 cup olive oil

  • 1 tbsp. Yeast

  • 1 tbsp. sugar

  • 1 tsp. salt

Ingredients for the filling:

  • Soy protein

  • Tomato paste

  • Black pepper

  • Cinnamon

  • 7 spices

  • Chili paste (optional).

  • Vegetable cube

  • Salt

  • Boil with water for 20 minutes.

  • Pomegranate molasses

  • Sautéed onions and green pepper

  • Tomato

  • (Optional) Flour

Let's Get Cooking:

Prepare the Filling:

In a pot, combine soy protein with salt, pepper, vegetable cubes, cinnamon, tomato paste, a dash of chili paste, and a generous sprinkle of the ever-versatile seven spices.

Add water and let the mixture simmer for at least 20 minutes, allowing the flavors to meld into a savory symphony.

Sauté the Goodness:

Meanwhile, in a separate pan, work your magic with a quick sauté of onions and green peppers in plant-based ghee.

Four minutes is all you need - just until the onions achieve that beautiful translucent glow.

Bring It All Together:

Once the soy concoction has simmered to perfection, drain any excess liquid and introduce the star players: pomegranate molasses, the sautéed veggies, some diced tomatoes, and, if you desire, a touch of flour.

This secret ingredient binds the filling together, ensuring THE perfect marriage to the dough.

Dough Delight:

Whip up a simple man’ouché dough - the canvas of your culinary masterpiece.

Mix flour, water, olive oil, yeast, sugar, and salt until you have a smooth, elastic dough.

After kneading the ingredients well into a homogeneous dough, let it rest for 1-2 hours. Afterwards, cut it into 4 pieces, shape into balls, and let them rest, covered on a floured surface for 15-30 minutes. Afterwards, you can roll them into the mankouch shape.

Assembly and Bake:

Roll out the dough and generously spread your vegan Lahme B. Aajin filling.

Bake until golden perfection blankets your creation, creating an aroma that will have your neighbors knocking on your door.

Serve with Flair:

Now comes the fun part—serving! Pair your vegan Lebanese Lahme Baajin with hummus, pickles, turnip pickles, and a sprinkle of mint leaves.

For an extra kick, drizzle more pomegranate molasses and add chili if you dare.

There you have it—a vegan Lebanese Lahme Baajin with a twist that will make you the star chef in your kitchen. Gather your ingredients, embrace the culinary journey, and savor the explosion of flavors that await! Enjoy!
