Plant-based diet advocate Ola Kayal is gearing up to launch Nabati Eatery in Jeddah's Al Rawdah district after a few years of pop-up events and home deliveries, promising a unique dining experience that is entirely plant-based, gluten-free, refined sugar-free, and organic whenever possible. The restaurant aims to promote sustainability by avoiding bottled water and composting leftover food, with plans to collaborate with local farms to source ingredients.
Having previously worked at Farmacy in London and later founded a vegan ice cream company in Florida, Kayal brought her expertise back to Saudi Arabia amid the COVID-19 pandemic. Her brand, Nabati, offers delicious plant-based ice cream flavors like lavender and blueberry, Arabic coffee, and salted caramel, crafted from a base of cashew and coconut milk sweetened with natural alternatives like dates and maple syrup.
Nabati Eatery's menu will feature inventive dishes such as a loaded plant-based breakfast and the Nabati Benedict with a cashew-based hollandaise sauce.
Kayal is also excited to incorporate locally sourced ingredients like oysters and lion's mane mushrooms from a trusted supplier and collaborate with farms dedicated to organic, clean-food production.
With Nabati Eatery, Kayal aims to meet the growing demand for delicious plant-based cuisine in Jeddah while remaining committed to her values of promoting healthy, sustainable eating habits.
